# Ingredient List:
→ Noodles
01 - 10.5 oz dried wheat noodles or ramen noodles
02 - Food coloring gels in pink, blue, yellow, and green
→ Cloud Sauce
03 - 3/4 cup whole milk or plant-based milk
04 - 4.25 oz cream cheese or vegan alternative
05 - 1 tbsp unsalted butter or vegan butter
06 - 2 tbsp grated parmesan cheese or nutritional yeast
07 - 1 tsp cornstarch
08 - 1/4 tsp salt
09 - 1/4 tsp ground white pepper
→ Garnish
10 - 2 scallions, finely sliced
11 - 1 tbsp toasted sesame seeds
12 - Edible flowers or microgreens (optional)
# Directions:
01 - Bring a large pot of water to boil. Divide boiling water into separate heatproof bowls based on the quantity of colors preferred.
02 - Add a small amount of gel food coloring to each bowl, stirring thoroughly until the desired vibrancy is achieved.
03 - Separate noodles into equal portions. Cook each portion individually in colored boiling water for 2–3 minutes less than package directions, ensuring colors remain distinct. Rinse cooked noodles under cold water to halt cooking and set aside.
04 - Melt butter in a medium saucepan over moderate heat. Add cream cheese and stir continuously until smooth.
05 - Gradually whisk in milk, parmesan, cornstarch, salt, and white pepper. Continue stirring until sauce thickens and reaches a creamy consistency, about 5 minutes.
06 - Gently fold noodles into the sauce. Take care to preserve color separation for a cloud-like visual, or swirl noodles for a marbled presentation.
07 - Plate colored noodles immediately. Garnish with sliced scallions, toasted sesame seeds, and optional edible flowers or microgreens.
