# Directions:

01 - Preheat the oven to 390°F (200°C). Lightly grease a medium baking dish.
02 - Bring a large pot of salted water to a boil. Cook elbow macaroni until just al dente, then drain and set aside.
03 - In a medium saucepan over medium heat, melt unsalted butter. Whisk in the flour and cook for 1 minute without browning.
04 - Gradually pour in whole milk, whisking continuously until smooth and thickened, about 4 to 5 minutes.
05 - Reduce heat and add grated cheddar, mozzarella, and cream cheese. Stir until completely melted and silky.
06 - Mix in gochujang, Dijon mustard, smoked paprika, and black pepper. Adjust salt to taste.
